Our food chemistry team Aaron and Blessing, this week are working on the validation of new methods for fatty acid methyl esters (FAMEs) in a range of food matrices.
This will allow us to breakdown total fat data into unsaturated, saturated, monounsaturated and polyunsaturated providing up to 40 different fat types. We are also developing a fast FAMEs method for most nutritional labelling requirements in under 8 minutes. This will complement our total fats analysis currently completed by NMR analysis.
