
Acrylamide Testing at Fitz Scientific

Acrylamide is a chemical compound that forms in certain foods during high-temperature cooking processes, such as frying, roasting, and baking. It is primarily found in foods like chips, crisps, coffee, baked goods, and other products made from starchy ingredients.
Acrylamide in Food Regulations
EU Regulation 2017/2158 outlines specific guidelines for sampling and analysis of acrylamide in foods.
For products that have a known and controlled acrylamide level sampling should be conducted annually and be representative of the entire batch or lot of the food product produced. Higher-risk foods, such as fried or roasted products, may require more frequent testing, while others may be sampled less often.
Samples should be analysed in a laboratories that participate in appropriate proficiency testing schemes and use approved analytical methods for detection and quantification. Laboratories shall be able to demonstrate that they have internal quality control procedures in place such as ISO 17025.
The analysis method should be capable of detecting acrylamide at levels specified in the regulation and results must be reported accurately, including the acrylamide concentration in micrograms per kilogram (µg/kg) for the tested food products.
